We have friends coming for dinner next week, and as they have been here countless times, I've run out of recipes for starters. Does anyone have a good easy one? I'm a recipe cook, so a vague description won't do!
If it helps, I'm doing a posh fish pie for the main course, and Oh is making coc mousse and a sort of brioche thing with fruits on top for dessert.

And sorry Gem, I've forgotten all about the stuffed mushroom recipe! Must have lost it.....if I say a huge please, could you send it to me again?? Pllleeeeaaassee... It would be good. Hope you enjoyed last Friday.......sorry I couldn't make it.

I think starters are so difficult. How about forgetting about it, as the main and pud sounds filling enough and just have a glass of pink champagne

Have a look at Delia Online. Couple of my favourite starters are piedmont roasted peppers and the twice baked cheese souffle that she does. both yum and dead easy.

what about stuffed onions, wrapped in panchetta and tied with rosemary - absolutely gorgeous. I think they are a Jamie O receipe.
boil onions for a few mins, cut tops of and spoon out insides, leaving them thick enough to stand up, make up stuffing of your choice, chop up some of the onion with whatever, peppers, cheese, mushrooms, etc and fill in, put tops back on, wrap a slice of pancheets around and hold in place with the rosemary, bake in oven for 20/25 mins and serve. Can be prepared earlier and kept in fridge until ready to bake.

What about goats cheese on french bread? I toast one side lightly and then on the other side I spread a thin layer of Lingonberry (I get it from IKEA!) jelly and then a slice of goats cheese. (you could you cranberry or anything similar. When the guests arrive shove it in the oven and by the time they have their coats off and a drink in their hand then they should be ready!! Just serve them on a huge plate on a bed of lettuce or put 2 or 3 on a small plate for individual servings.
You could always do a tomato and basil soup-quite light and can be prepared earlier and then just heated and served with a dash of bream and croutons.

Forget starters!
Buy some nice canape type stuff from the supermarket freezer section - spring rolls, wontons, etc.
Or do some blinis with smoked salmon.
Serve with a nice glass of white wine before you sit down at the table. You could even serve them in the garden if the weather is nice.
And it allows you time to faff around in the kitchen

One of my most successful starters has been a sort of mezze. I roasted some vine tomatoes, made a bean pate, a mackerel pate, and had some olives, small pickled onions, oatcakes and krisprolls to go with. It was very straightforward as I prepared everything earlier in the day and then just opened the appropriate jars!

wispa, That's a lovely idea.Unfortunately, because these friends have been coming here to dinner for over 30 years I've exhausted all my ideas, including that one. I've done the blinis with a salmon wrap thing too. Gem's mushroom thing is the one I'm going with. Thanks so much! x

Seriously .. the Delia twice baked souffle is a doddle. Thing is, you make it, & cook it and it all puffs up lovely, then you let them cool, tip them out of the ramekins and pop them on a baking sheet and shove them into the fridge until needed. By this time they are flat as anything. Then ten mins before you pop 'em back in the oven with a topping and they rise up and you serve them, looking like you are worthy of a michelin star, but its all a cheat
