elderflower cordial

hi , this is a recipe for a delicious cordial drink, you mix it with water or wine . 4lb granulated sugar, 2pts water, 2x fresh lemons, sliced , 2and halfozs citric acid, 15 to 20 elderflowers .stalks removed , shake well to remove insects. put water and sugar into a pan and slowly bring to boil untill sugar has dissolved, stir continously. pare lemon rind and toss into large bowl, cut lemons into slices and put in bowl ,when sugar is dissolved pour liquid over lemon and elderflower in bowl. stir in the citric acid and cover with clean tea towel leave for 24hrs, strain through either muslin or a tea towel over a sieve, put in clean plastic bottles , this makes approx 4 water sized bottles add 4x parts cordial to 10 parts water , or with wine to make a spritzer . also can use in desserts and icecream , keeps in a dark cupboard for several weeks enjoy liz x

Thanks for this Liz, we have an elderflower tree at the bottom of the garden and I always resent buying cordial when the flowers could be picked for free!

Recently made Delia's gooseberry and elderflower ice cream with home grown gooseberries, which was delicious. Could make it with home made elderflower cordial next time too!
