Wedding Cake Update

I thought I'd let you know how my daughters wedding cake is getting on. Well, its for the 3rd July, and I've found a most gorgeous recipe in June's BBC Good Food magazine, its for a vanilla cake. I made one to try and its really easy and also good to eat, not too sweet and also moist. I'll fill it with a vanilla butter cream but also with a nectarine mousse that I've found a recipe for.

I can really recommend this recipe! Its been in my fridge wrapped in foil for a week now and is still fine. I've just been tasting it with different filling combinations...any ideas for nectarine fillings welcome! Will post a picture of the finished cake in July!

Haha Carrie, chances are it'll turn out to be a brick!!!

Seriously I'm keeping my fingers crossed, but it is really a great recipe. Now, wait 'til I start on the icing, now thats something I've never done before. Zoé has such trust in me....she knows I've always dreamed of making her cake...reality is dawning now and its got to be a success!

It will be . I have no doubt it will be a show stopper. Zoe and all of us have great faith in your cooking.

Yummy - sounds lovely hun - definitely keep a slice for me too. Where did you get the recipe for nectarine mousse - was that in the food mag too?
