Slow cooker recipe for Brisket anyone?

Hiya

Just got a new Slow Cooker at the weekend. Have made a lamb casserole which was lovely but have bought a piece of brisket which I remember my mother pot roasting when I was a child. Does anyone have a recipe suitable for a slow cooker?

Hi sorry not to have sent this before, have been so busy today, and didnt get chance to send you the recipe before now, damn work, gets in the way of everything!!

boned and rolled brisket
2 red onions cut into wedges
6 small organic carrots scrubbed
2 celery stalks corsely chopped
1 whole had of garlic unpeeled cut in half
2.5 cm piece fresh ginger crushed
4 fresh bay leaves
7-8n sprigs of thyme
1 tsp peppercorns
about 8 floz beef stock
about 5 floz red wine
2 tbsp english mustard

season the beef and sear on all sides, put into the slow cooker and spread with the mustard. Heat oil in the same pan and add the onions carrots and celery and saute for around 5 minutes. add the garlic ginger, bay leaves, thyme, peppercorns, stock and wine, bring slowly to the boil, then put into the slow cooker.

Depending on the size of the piece of meat and the slow cooker will depend on how long you cook it for. As a guide mine usually stays in over night on low.

Hope this helps and that you enjoy it. There are very few slow cooker books around, or at least ones in which the recipes to me look nice, but I do have one called the Ultimate Slow Cooker, it has some really nice unusual things to cook in it.

My recipe isn't very precise but I usually heat the slow cooker, brown the brisket and pop it in and in the frying pan I used to brown the meat soften a sliced onion for a couple of minutes, heat through a couple of thickly sliced carrots for the same amount of time and add to the cooker then deglaze the pan with a splash of red wine (if there's some open) and some beef stock (an oxo cube is fine) and add it to the cooker making sure it comes about half way up the meat. I usually throw in a couple of bay leaves and maybe a dozen peppercorns (I lightly crush them so they're just breaking open but not ground). That's it - mine usually goes on about 1pm for dinner at 7pm - the piece of beef usually just fits and I cook it on high. The stock in the slow cooker makes a really good gravy and the veg is yummy.

Hi ladies

Thanks for the recipes- my brisket is currently on low - got up this morning and started it off. floured , salt & pepper and browned it in the pan. Now sitting on a bed of onions , carrots and celery plus two cloves of garlic. Mixed some beef stock and red wine and brought it to the boil. Added that - high for an hour , now on low until I get home.

lets see whether I have a good dinner or not..........
