Help please ladies - the ultimate scone recipe...........

For more years than I care to mention I have been searching for the ultimate and infallible scone recipe. My disastrous attempts fill me with despair and the picture in my mind of afternoon tea in the garden, eating scones made by yours truly with strawberries and clotted cream, is fading away. Can someone rescue my vision and help me to scone paradise? I know the secret is out there somewhere................

Staight from my Gran's recipe book:
Scones
Recipe

4 oz Self Raising Flour
1 oz Margarine
½ oz Granulated Sugar
Dried Fruit/Cheese (optional)
½ Egg (optional)
Milk to Mix

Oven 450F or Regulo 8 for 7 - 10 minutes

Method

1. Rub fat to flour
2. Add sugar/fruit/cheese
3. Add milk to make a dough
4. Roll out but keep it quite thick about ¾”
5. Use cutters to cut into rounds
6. Place on greased and floured flat baking tray
7. Beaten egg can be brushed over the tops to glaze

I find buttermilk is better than ordinary milk; also omitting the sugar gives a lighter result.

I always use self raising flour plus baking powder and cut them out a good inch thick. Don't roll out the mixture but just pat out with hand. Guarantees them to rise.

This recipe works every time and scones are delicious!

225g s.r flour
qtr tsp salt
50g chilled butter (cut into small pieces)
25g caster sugar
125ml milk
4 tbsp plain yogurt

Oven 220c/gas 7

Rub butter into flour and salt, then stir in sugar. Mix milk and yogurt together, pour most into flour mixture and gently work together with blade of knife.

I usually find that there is too much liquid, so air on the side of caution as you pour it in!

Recipe says this will make 6 scones, so I often double it as there are 5 of us and you need at least 2 each! If I do make just the quantity it says, I often cut it into 6 triangles rather than use the cutters.

I would always recommend the Be-Ro baking book for their simple to cook recipes. I have been making cheese and fruit scones from that for more years than I can mention. The only difference is I use all milk rather than mix of milk and egg. Good Christmas cake recipe also. June x

I am new member and just seen your request for scones. Here is my best recipe:-
8oz SR Flour
2oz Butter
1 1/2 oz Sugar
1/4 tsp Baking Powder
2oz Sultanas
pinch salt
1 Egg plus make up to 1/4 pint of liquid with evaporated milk.

Mix the flour: butter: salt and baking powder together lightly to form breadcrumbs then stir in the sugar and sultanas. Whisk the egg and milk and add to the flour mix - add in stages as you want the dough to be dryish not too wet. Roll out to about 1/2 inch thickness and cut into rounds. Brush the tops with egg or milk and I always add a sprinkle of sugar on top.
Bake in hot oven until just nicely browned. If you dont want fruit in then leave out the sultanas and add an extra 1/2oz sugar. Enjoy

The best scone recipes are in the Be-ro book. I think Be-ro used to be a brand of flour. I made the mistake of lending my copy to my sister and I never saw it again. I made all my scones using the recipe from that book.

I am sure I remeber my mum using sour milk to make scones...am I right , has anyone else heard of that?

I've heard of using sour milk too or even cream. would be interested to learn which receipe you liked bigsall.

Quick easy and delicious
4 cups Self Raising Flour
280mls single cream
1 can of lemonade
pinch salt
Cook at 200 for about 10 mins
