Leftover Pork..

What does everyone do with their left over pork please. looking for inspiration as I have quite a lot left from Sunday dinner and don't want to waste it!

is it Irish??? we're supposed to be avoiding irish pork! Theres always something that is alledgedly contaminated.
Not sure what to do with leftover pork other than put it in sandwich with stuffing and apple sauce.
Curry it!

No, it's definitely French! I have found a recipe for 'Sofrito' which sounds lovely. Think I might try this...

Layer slices in an ovenproof casserole with chopped or crushed garlic, lots of fresh, chopped or dried parsley, salt & pepper. If you need to eke out the meat, you can alternate with layers of thinly sliced potatoes, but will need longer cooking if the potato isn't par-boiled.
When the layers are finished, sprinkle liberally with red wine vinegar and olive oil. Cover and bake in a medium oven for 1 hour.

I've used left over pork in wraps, with cucumber, spring onion and hoisin sauce

Ok, here goes... Day 1 - roast, day 2 - cold with mash and veg, day 3 - curry, sweet and sour or a stir fry (leftovers from this meal will end up in the freezer)...

Hi, here is a good one: (serves 2-4)
Dice the pork (if raw fry in veg or olive oil until sealed).If cooked add to other ingredients.
Fry 1 finely chopped onion until golden in veg or olive oil
1 chopped stick of celery
1 large carrot finely diced
1/2 red pepper diced
1 tin of chopped tomatoes
1 tablespoon tomato puree
3/4 pint pork stock (or veg stock)
Add tablespoon of Schwarz Cajun spice mix (or the Moroccan)

Cover and simmer for an hour (raw meat)or until veg are soft OR place all ingredients in oven and casserole on Gas 200 .

SERVE with rice.
