I am for the first time going to ice a Christmas cake and was wondering when and how to make the icing, icing for me is usually on fairy cakes so need some guidance on using on large cake please,

AMM-- royal icing can be made in advance and kept in the fridge, You will need a pallete knife if you use royal icing. Have you thought of using fondant icing it easy to use and can be bought from the supermarket already rolled out. i am retired now from cake decorating but still enjoy using my skills at this time of year, and at the moment i'm doing gingerbread houses and churches for a trade fair. I'm sure you will enjoy decorating you cake -- good luck Cinnamon

Royal icing is made using egg white and icing sugar. My son iced our Christmas cake when he was about 11 for the first time and he has done it ever since. I just gave him the ingredients and cook book and he did the rest.
One year, I had made a loaf shape cake and he built up one end with marzipan and then iced it. Father Christmas was coming down the slope on skis.
Another year the icing was so runny, it ran off the cake onto the board. So he just made sleigh tracks on the top and then had FC and his sleigh crashed on its side on the board.

To avoid having to use raw egg whites, Royal Icing Sugar is also available (I shop in Sainsburys) to which you just have to add water. It is used in the same way as conventional Royal Icing.

My Mum was never a baker. She used to buy her cake from M&S, then ice it herself with royal icing, and stick on the usual Xmas decorations we had been using for years. She used the "snow effect" technique for icing.
Then someone told her to add 2 drops of blue coluring, to make the icing look really white! Well she just had to try that!
So she bought all the ingredients, made the icing, added the colouring....and the phone rang. While she was on the phone, my sister decided to help by adding some more colouring. Waste not, want not!
That year, we had a bright blue Xmas cake

Fondant icing can be made or bought ready made and easy.
Royal icing might be traditional but for me, I'm OK until I smell the egg white. Then I'm completely put off.
First time I made and decorated my own Christmas cake, I spent ages in the kitchen alone to keep it a surprise. When it came time for the great reveal my OH said, "It looks exactly like what it is - a home made cake!"

A few drops of glycerine added to the icing and mixed in, stops the icing from going so hard that you can neither cut it or bite it.
Crafty:- You must take that remark from your OH as a compliment, there is no better way to a mans heart than through his stomach and although some won't admit it, most men prefer home cooking to shop bought.
So, give yourself a pat on the back.

I make my christmas cake but cheat on the icing, i use ready rolled marzipan and icing, so it's a doddle and I buy a tub of ready made Royal Icing for the famous snow effect, they are all available from any supermarket. I don't like icing and marzipan, so mine is peeled of the cake and binned, OH scoffs the lot and never complains. I suspect that If I liked the marzipan and icing - I would be making them!
