Bread and butter pudding!

I can't remember who said go for it when I said that I was thinking about making bread and butter pudding for the first time ever, but thank you.
I made it last night and it was delicious. The only thing was that the dried fruit on the top layer was rather charcoaly even though the pudding was perfect otherwise.
Any ideas why and how do I stop this? Perhaps I should just tuck it all in under the bread?

Hi Katy

You can tuck it under and just put mixed spices and brown sugar on top or you could soak them in a spot of sherry or orange juice and keep them a bit plumper and moist and cook a bit slower, thats what I do and it seems OK for me.

Also put marmalade in with my bread and butter

You can also make a savoury one sprinkling caremalised onion and cheese in it instead of sugar and fruit - surprisingly good! The permutations are endless - mit-cuit tomatoes, finely chopped fried bacon or chorizo, garlic, freash herbs, smoked salmon...............you could make individual ones in ramekins for a posher dinner party starter.

I do a 'posh' one with brioche instead of bread, and replacing some of the milk with cream.....not tried the savoury one, will have a go, thks 50something.....

We had savoury bread & butter pud last week. So simple and great for using up slightly stale bread and cheese that's gone a bit dry.

I have made one with fruit bread and exotic fruits and add Baileys to the milk and eggs...it is absolutely gorgeous!

For a bread and butter pudding with a kick, soak the fruit in brandy or calvados the night before.
