Hi there
I have left over Beef hot pot that I need to use up. It has already been very thoroughly cooked so I don't want to stew it any more. It was cooked by wrapping it in Parma ham, sealing, sprigs of rosemary added. Then shallots, tomato puree, stock, potatoes, carrot, thyme and porcini mushrooms, with the beef sitting on the top in the oven for 2 hours.
So I now need to use the rest up, I am considering making it into two individual pies but as it was quite 'tart' I will need to add something to the mix and I'm not sure what.
Has anyone got any suggestions? or any other ideas altogether?

Make a super soup and open another can of tomatoes to give it a zing !!

Nice idea, but I think that there is too much meat left. I would have tried making it into a kind of stew otherwise. I might just shred it for now and freeze it until I can make my mind up.
