Just made some strawberry jam!

The kitchen smells wonderful - a taste of summer. Tempted to have croissants for breakfast this week, just to try some!

I have an excellent microwave jam recipe which never fails to set and is so quick and easy to make. Got it from the pectin packet. Even works with frozen fruit and keeps well.

You will need to buy Silver Spoon Pectin to get the jam to set and the recipe is on the packet. It's really quick and easy just remember to sprinkle the pectin into the mix or you will have lumps in the set jam.

Mine is a bit runny although I did use very unripe fruit - but I can always use it as a sauce for ice-cream or as a flavouring for a fool etc....I think it might just stay on a scone long enough to get it to my mouth!
