Veggie alternatives in diets

I enjoy looking at all the diet menu's and keep meaning to get organised enough to follow one; however I don't eat very much meat, no reason other than i don't like the taste or texture. I eat a little chicken, and love fish and seafood. It would be good if alongside the meat ingredient there was a veggie alternative.

I haven't eaten meat of any kind nor chicken, for years. I substitute any recipe I like the look of with Quorn. D likes Tofu but I'm not fussy for the texture. Quorn is very low in calories and fat content. If that doesn't appeal use fish.

Tonight it's Jamaican Black Bean casserole (a weight watchers recipe). D who is stick thin requested it because it is to die for.

Please can I have the recipe I only cook "point controlled" recipes these days so would love any recipes you have tried.
I go through the magazines and check the points too so its easy to use the afterwards.
The chorizo recipe in the autumn magazine made with eggs was delicious and suprisingly low in points
