Can anyone help me with a recipe for home made humous (sorry if the spelling's incorrect) My husband loves it but sometimes the use by date on the pot is too soon, hence wanting to give it a go and try a home made version. Also bought the Hummingbird recipe book today having read some comments on the forum, can't wait to give the recipes a go.

We love humous too! Must admit, haven't made it for years (since it became readily available in the shops).
Would have to have a good hunt for my recipe, but I've googled it, and this is pretty much the one.....

I was reading an article recently about he Greek diet being one of the most healthy. I'd happily change to that I love greek food.

I like making humous its so easy but daughter only likes shop bought stuff.....  Tin of chick peas, drained into blender with garlic and parsley (or any other combinations) add olive oil and whizz...

I love home made houmous!
What I do is I shove the following in a blender: 1 drained tin chick peas 1 clove garlic juice of half a lemon olive oil few drops of tabasco sauce
Normally I will blend this, and taste, adding more oil, lemon juice, or even some water till I get the taste and texture I want.
For a more complex version, grill a red pepper till the skin goes black. Put in a plastic bag for a minute or two and then peel off the skin. Shove the peeled peppers in the blender with the above ingredients plus a good handful of fresh coriander. It's a delicious variation.

I am going to try this as the humous we get here is much thicker than the stuff I used to get in the UK and I don't like it as much. Also it has a use by date weeks ahead and lasts for ages after opening, unlike the UK ones. I suppose you might say that is a good thing but it makes me wonder how many weird preservatives they are putting in it. I particularly like the red peppers and coriander idea - very summery.

Love Greek food too,there was a gorgeous thing called skordalia they used to do...anyone got that recipe,mainly potatoes,I think

We love hummus! It is a staple in our summer menu and I love to make it for guests and potlucks.
My easy recipe is:
1 can garbanzo beans (drained) 4 cloves fresh garlic Sea salt to taste 1 tbsp fresh lemon juice Ground black pepper to taste 1.3 cup extra virgin olive oil (modify to consistency desired)
Put all ingredients in cuisine art and blend at pulse speed to desired consistency. You may pulse several times and stir with wooden spoon to distribute olive oil. FOR THINNER HUMMUS to use as a vegie dip-try adding more olive oil- FOR THICKER HUMMUS to use as a spread on crackers or bread, this may be just enough Olive Oil. PRACTICE
WE LOVE IT ON HOMEMADE FOCACCIA BREAD
