Salads for Barbecues - help please

I don't do much entertaining but have invited work colleagues for a barbecue on Saturday. Can anyone give me easy recipes for a rice salad and/or potato salad together with advice on if they are best made on Saturday morning or would be ok made the night before? All help much appreciated

I judy. Rice salad is so easy and can be prepared for the most part the day before! Boil your rice however you normally do it (I do mine in the microwave!) Once is cooked drain and rinse in cold water thoroughly and out in fridge straight away. The next bit can be done now or the next day. Chop peppers (red and green) and onion and mix in with the rice. I also put some sweetcorn in and on the same day som really crispy apple.

Cous cous is also very easy to do and can be mixed with e same things or instead put some very lightly cooked frozen peas (only lightly cooked so they are still slightly firm to the bite) Chop cherry tomatoes into quarters and throw in and cucumber or whatever you fancy!

Slice cucumber and tomato together and serve as it is or roughly chop a block of feta cheese and mix with a bowl of olives

Another easy one is a dip of Tub of cream cheese (the one with garlic and herbs) mixed with a tub of Creme fraiche-easy and really lovely!! Serve with crudites.

I never do potato salad but just do boiled new potatoes - these could also be cooked and just reheated and a blob of butter and touch of parsley or mint when you are ready to eat.

As you can see I am the mistress of doing as little as possible on the day and making life really easy so I can enjoy my guests company instead of rushing round all sweaty and horrible!!

I agree with all the above, we have a lot of BBQs and I always serve little new potatoes (the Charlotte ones are good) hot/warm with butter and chopped parsley, plenty of them as people keep eating when they are cold. I keep the work to the minimum, simple green salad and bowls of cherry toms. I always do a coleslaw as its so easy, prepared a.m. Chop a small green cabbage, chop into small pieces an onion and grate some carrot. mayo, s&p. The choices of salad are endless, but keep it simple and no pressure....Enjoy....

I will definitely go with the baby potatos and keep things simple.

Judy,
Delia does a brilliant dressing for new potatoes with is very lemony and garlicky. I will post it if you fancy a go. I think it is in her summer book. Lemon vinaigrette.

Got my taste buds going so here it is for anyone that wants it.

4 tbs lemon juice
grated zest 1 lemon
4 tbs olive oil
1 heaped tsp grain mustard
1 clove garlic
1 tsp rock salt
back pepper

Crush garlic clove and salt together in pestle and mortar. Gradually whisk in all other ingredients and pour over new potatoes whilst they are still hot (so they absorb it). Scatter with chopped chives and/or parsley
Brilliant with salmon or any other BBQ meats.

Tabbouleh is easy (using bulgar wheat) You can make it the day before and it looks like it was much more difficult to do.
