Zucchini - How do they do it???
      #414551 - 29/06/2009 17:55

How can it be that I check my garden every day and yesterday, the zucchini wasn't more than 5-6 inches and today when I looked, it had turned into a marrow!!! What's their trick? They do it to me every year, but luckily I got a great recipe for Bread and Butter Pickle from my Mother so they all get used up.

Your zucchini must be related to my potatoes, last Monday a small green shoot, today a rain forest!!!!!!!!!!!!!!!!!

If you get a glut of them here is a delicious recipe for mucver, Turkish courgette fritters, lovely served just with salad and a dollop of greek yogurt.
A helpful Turkish bloke shows you how to make them in his kitchen and you have a bit of music to get you in the mood.

Enjoy!

When I get a glut or they grow too big I cook them in water and the zap them with a hand blender and freeze to use later as a base for soup. I also do this with broccoli.
