Hi LovelyLady,the nicest carrot cake recipe I have used(and I've tried a few!!!) is the one from Cranks.I do have the recipe but if you google cranks,it is on their page and gives you the chance,----if you are ANYTHING at all like me---- to peruse more of their superb recipes.

the best carrot cake recipe ever is delia smiths ultimate carrot cake, i make it regularly and everyone thinks it's the best cake they've ever eaten ! i leave out the mixed spice, cinnamon and the pecan nuts as we dont like them. the syrup which you pour over whilst the cakes are hot makes it very moist and sticky. if you google it you'll find the recipe. the girls at work beg me to make it but i have to bake 2 as 1 isnt enough to go round, they argue over it !

I once made a carrot cake. No one would eat it. I threw it out for the birds - they wouldn't eat it either. Had to bury it.

Have you tried the new layered carrot cake which M&S sell? I had it spotted in a local store yesterday - looked marvellous,but at 400 calories for 1/10th of a slice,don't think I'll be trying it in the near future!! Spangle

I just made Delia's ultimate carrot cake today following the recipe to a T. I have one word for it UGGHHH. At the moment it is lying like a lead brick at the bottom of my stomach. It is interesting you leave out the mixed spice and cinnamon, marie, because I felt the amount stated in the recipe is far too much. Half a level tsp of mixed spice would have been enough and I didn't like the topping. Mascarpone with sour fromage frais does not work in my opinion. A buttercream or cream cheese with lemon or orange zest would have been nicer. The way you make it sounds better.

Made the Cranks carrot cake yesterday.A great success ,so thank you Nannyconnie for recommending the recipe.My OH is not usually keen on carrot cake but he really likes this one.

sorry maryjane, forgot to mention that i don't bother with the fromage frais as it usually makes the filling too sloppy ! i just use mascarpone and caster sugar.
