Sorry ladies..this is a heartfelt post. I consider myself a good cook but as I don't really "do" parsnips and I have to do them every year out of deference to my MIL I have always 'winged' it in the past...so I thought, who better to ask than my forum friends..... What and how is the best way to cook parsnips.. This is a bit of a short term request as we have our dinner on Xmas Eve so please reply to me by about midday tomorrow..otherwise they will be the same soggy offereing they have been for the last few years...

Roasted. Peel them, quarter them, get a little oil sizzling in a roasting tin in the oven, chuck 'em in and give them 45 mins or so. You can drizzle them with a bit of honey near the end of cooking if you can be bothered, then season well, drain & serve. Yum yum.

Definately roasted...in fact my sis in law put a specific request for roasted parsnips this year!

I agree with Shoelover,Peel,I halve and scoop out some of the middle,blanche in boiling water for two/three minutes,drain and dry on kitchen roll for a few second,then straight into hot fat for roasting,which can be along side the roast potatoes if you have room. Drain and serve.

Agree with Shoelover. I don't bother blanching Parsnips(I do for carrots and potatoes as they need more cooking) Put some onions(Quartered) in with them for added flavour. Good Luck!

I love parsnips, and not just at christmas, why dont you save yourself from "peeling" Sallykins and buy the frozen ones, they taste just as good.They're good mashed as well with chopped crispy bacon!!!!

My family just love parsnip chips.I boil them until nearly done andthen cook in a saucepan of hot veg oil.

I always roast my parsnips with the potatoes, but they don't take as long to roast so they go in for the last half hour or so.

Why not try Delia's recipe? Parboil them, then in a plastic bag while they are still hot shake in flour and grated parmesan and then toss them in with your roast potatoes for the last half hour. Delicious.

I do parboil mine but I don't think it's necessary. So why do I do it, well, I'm doing the 'tatoes so may as well chuck the parsnips in for a few minutes too!
Enjoy. I think I will do mine with honey tomorrow... hmmm love parsnips.
