Help! Greek Salad Recipe Please
      #287131 - 23/12/2008 12:06

ED has asked me for the greek salad recipe from a M&S recipe book entitled 'Salads'.

She says "I think the last time I saw the book, it was on the book shelves in my old bedroom".

Well, I've had a complete clear out since she left home and can't remember ever seeing such a book.

Please save me!

Has anyone got a recipe for a greek salad?

Thank you, thank you.

Easy! Find a Greek woman or man and ask them to make salad = Greek Salad!

Hope that helps.

Loo

Cucumber, feta cheese, tomato, lettuce, olives, Virgin olive oil.

This is how OH makes it and it is about the only thing he does make in the kitchen. We go to Cyprus a lot and it is his favourite- The Feta cheese should be in small pieces and not too much oil.

Hope that helps

Loo,Have found this one for you in my 'Salads for all Season'from around the world book.

Ingredients (to serve 4)

1 Cucumber
1 Green Pepper
500g/1LB 2oz Tomatoes
1 Red Onion
200g/7oz Feta cheese
100g/40z Black Olives.

For The Dressing

3 tbsp wine vinegar
pinch of salt
5 tbsp olive oil
Black Pepper
1 tsp fresh oregano or 1/2 tsp dried.

METHOD

1 Peel the cucumber, halve lengthways and scrape out the seeds with a spoon. Cut the halves into 1cm/1/2 inch thick slices/

2 Halve the pepper,de-seed and cut into strips. Wash the tomatoes ,remove the stalks, the cut into eight equal wedges.

3 Peel the onion, slice in half, cut into rings and halve the rings. Put all the chopped vegetables into a big bowl.

4 Dice the feta cheese or crumble it with your fingers. Remove the stones form the olives if necessary. Add the cheese and olives to the ingredients in the bowl.

5 For the dressing, stir together the wine vinegar and salt until the salt has completely dissolved. Whisk in the oil in a thin stream. Continue whisking until the dressing is creamy. Season with plenty of black pepper and add the oregano.

6 Pour the dressing over the ingredients in the bowl and leave to marinate for about 1 hour before serving.

Serve with crusty bread.

Gosh Girls, I knew you would come up trumps. I will email ED with all the recipe's and the weblink and then she can choose. YD has been scooting round in her lunch break cos, ED thought YD had it at her house.

(We call them Eadee and Whydee now - they have become nicknames, thanks to the Forum).

I made a Greek salad during the summer for a BBQ: one guest, who should be nameless, spat out the Fetta because it was too salty and then said he would try the grapes (olives) instead... silly b...er
