If you have a big piece of Parmigiano wrap it in a clean cotton tea towel soaked in white wine and then in the fridge, lower shelf.

Perhaps you don't need to soak it as I understand your place is already humid. Do it if it dries too much.
Trust me, I live with Parmisan.

All cheese goes mouldy and all cheese shops trim cheese to keep mould at bay. So don't worry if your cheese goes mouldy, just trim it off and the cheese will be fine underneath.

I could be another Mrs Widdle, couldn't I?

Hi MangeTout
couldn't find a translation for "trim" do you mean "grate"?

Parmesan has to be grated on the spot.

No, Beba, slice off might be a better expression. But not too much, just enough to get rid of the mould. Slicing off too much would take off the profit!

Oh I see.

Wondered what it was that treatment for a cheese! What a pity to throw it!

Ciao Beba

I like the sound of a tea towel soaked in white wine, I will try that.

No tea towel sucking though Suzie when you run out of wine

Hi Beba
What a wonderful tip! I love parmesan and always have a large chunk in the fridge.
Thank you

Think I'll be trimming my parmesan when I get home tonight. Noticed a splodge of mould yesterday and thought I'll get around to that in a minute...
