Cooked this dish for supper last night and thought people might like to try it- its really tasty but quick to make and makes sausages go further
1 tbsp olive oil 1 small onion,finely chopped 6 Toulouse or similar sausages, skinned and cut into small pieces 3 garlic cloves crushed(or I used 2 tsps garlic puree) 1 tsp fennel seeds pinch chilli flakes 4 tbsp red wine (optional, but adds flavour!) 1X220g tin chopped tomatoes 240g fettucine/spaghetti/linguine 40g freshly grated parmasan
Soften onion in oil and set aside Brown sausage pieces. Add garlic,fennel seeds, chilli and cooked onion. Add red wine and tomatoes, season and cook for about 25 minutes until quite dry. Cook pasta, then either mix with sauce or serve pasta with sauce on top. Sprinkle parmasan over (can use a few basil leaves as well if you like) and serve. (Serves 3/4)

I use virtually the same recipe to make meatballs from sausages (any spicy sausages work well) and have found that it freezes well to so usually make double the amount.

I had that for supper last night too - but used quorn bramley apple sausages and had a jacket potato instead of pasta. Yummy Anne xx

What is a Toulouse sausage? I thought they would be labelled, but not in the supermarket I use! In the end I bought some kinda chorizo ones...will that do?

They are more like ordinary sausages (Porkinsons are good) Did you try chorizo? Not sure if the flavour would go with the fennel seeds
