Main course for dinner parties.

Ok, so we've done puddings and starters, and swapped some good ideas there, so what main courses can we come up with?
Tell us what you cook.

cock au vin, roast lamb, or chicken biriani if OH is cooking all 3 will not keep you from guests and are foolproof.

goulash
mediteranean chicken casserole with olives
moussaka
I like to do things that don't require lots of hovering over the cooker, so I can spend more time with my guests

How about Salmon in Parma ham - soooo easy and delicious too (if you like fish!). Just take salmon fillets (skin off), wrap in two pieces of Parma ham each, put in dish and douse with a glug of white wine and poach in a moderate oven for about 15 mins. Remove from oven and flash under a hot grill just to crisp up the ham. Serve with buttery new potatoes, mangetout, carrot ribbons etc.

a nice recipe from the Weight Watchers 'Cook' book - salmon fillet with a lemony/lime cream cheese topping, wrapped in filo pastry. Doesn't taste like diet food at all - no one ever guesses!
