Inviting everyone to give one easy pudding recipe, with the accent on easy...see what we come up with!
Pineapple Romanoff
I large fresh pineapple 3tbsps Cointreau half pound fresh strawberries half pint double cream#3ozs sifted icing sugar peel and juice of half a lemon
Cut pineapple in half lengthwqys, cutting through crown as well...each half should have own crown. Remove and discard core. gently scoop out flesh and cut into cubes. Put cubes into bowl and mix with 3tblsps Cointreau Chill 2 hrs About 1hr before serving, slice all but six strawberries Whip cream 'til thick and stir in sugar, lemon peel and juice, pineapple cubes and strawberries Spoon into pineapple halves and chill half an hour. serve on meat platter with halves facing opposite ways, decorated with a line of strawberry halves you have saved.
Easy and looks really impressive!

Fresh Strawberries with Chocolate Ice Cream and chocolate sauce. When Strawberries not in season choose bananas. Be decadent and serve with thick cream as well as sauce.
Or....
Eton Mess: Cut up strawberries into chunks, crumble some ready made meringue nests into chunks. Mix strawberries and meringue into whipped cream.

How about:
APPLE AMBER
Serves Four
450g(1lb) Cooking Apples 110g (4ozs) Sugar (or to taste) 2 large eggs, separated Juice of 1 Lemon
Pre-heat oven to180C/Gas4
Peel, core, and thinly slice the apples and cook with 2tbsp of water, stirring occasionally until they form a puree. Separate eggs Add about 3/4 of the sugar, the lemon juice and the egg yolks, mixing well. Place in ovenproof dish and bake for 20 minutes.
Whisk the egg whites, until stiff, and fold in the remaining sugar. Pile the meringue evenly on top of the apple mixture,return dish to oven, and bake for another ten minutes.
Serve hot or cold.
This recipe is so quick and easy, and we really enjoyed it.

How about this one
Chocolate and Coffee Mousse mmmmm
Preparation time: 15 minutes, plus 1 hour chilling Cooking time: 5 minutes Serves 6
100g (4oz) good quality dark chocolate, plus extra to decorate 2 whole free-range eggs 1tbsp coffee essence (such as Camp coffee) 4 free-range egg whites 0% fat Greek yogurt, to serve
You will need 6 cappuccino cups or ramekins
1) Melt the chocolate in a bowl over a pan of barely simmering water, then set aside to cool slightly. Whisk together the whole eggs with the coffee essence before beating in the chocolate.
2) In a clean bowl, whisk the egg whites until soft peaks form, then fold through the chocolate mixture until evenly combined. Spoon into ramekins or cappuccino cups and chill for at least 1 hour. When ready to serve, grate some dark chocolate over the top of the mousses, add a dollop of yogurt and a little more grated chocolate.

They sound great...will try them both...thanks! I knew this would be a good post. Maybe when we have a good few, we could do the same with starters and main courses for dinner parties! Don't you find that recipes people give you are much better, as they KNOW they work?
I am starting to allow myself limited time on here, it is addictive!

Individual Banoffee Pies (for 4)
4 ready made individual pastry cases 2 or 3 bananas Bottle or jar of Dulce du lece or toffee sauce creme fraiche flake
Put a layer of strawberries in each case, then cover with the toffee sauce. Cover that with the creme fraiche and then sprinkle over the crushed Flake.
Done!

Lightly toast some pinhead oatmeal. 0% Fromage frais, creme fraiche or double cream as preffered. Raspberries or other in season soft fruits
Wiskey ( optional)
In a pretty wine glass layer first the oatmeal then fruit with a little juice or alcohol, then 'cream'.Layer until to the top. I usually put all the ingredients in little bowls and the guests construct it themselves - even easier. Chocolate shards can be used to decorate.

Kate, dulce de lece is just a posh name for toffee sauce. You can get it at most supermarkets. The one in my cupboard is by Merchant Gourmet.
It's the same stuff you get by boiling condensed milk. It's so yummy!

Chocolate Muffin cake
Get some choclate muffins and break them up and squash down into spring form tin you have already lined with wetted greaseproof paper. Base should be about 3/4 inch think.
Melt 3 bars of G&B white choclate with same weight of double cream. Add only a couple of tbspns to the melting choc to let it down. Once all meted and cooled add the rest of the cream. Por the white choc mix into the time and cover with cling film. Put in the freezer for 24 hours then take out about 30 - 45 mins before serving . Cut into slices and serve with raspberry puree.

kate I only really make puddings when entertaining, so don't have a lot of quick/easy recipes. The ones I do have are really easy. As we eat a lot of very hot spicy food, we often finish with a fruit platter, just lots of chunks of fresh pineapple, mango, kiwi, papaya etc. No need for cream or sugar after spicy food. Platter on the table and everyone has a fork or skewer. The only quick one is the good old banana split Cut banana lengthways, drizzle with chocoalte sauce and top with ice cream. So I will try some of the ideas posted here.

Elsie & Kate and Toffee sauce. Good for a quick Banoffi pie too, is the caramelised condensed milk now made by Nestle and sold in tins, near the condensed milk. (I know cos I bought it by mistake!)

Pop down to M&S Scan shelves Choose pud Pay for pud Go home Open box Put on plate Add a sprig of mint & a strawberry (this part is essential) Serve to unsuspecting dinner guests whilst muttering something about how you have slaved all day to make it.

Hi Ladies
This my fave dessert, it is easier than it looks and can be made a couple of days before it's needed and popped in the oven for 14 mins just before it's needed, which is the only way it qualifies as a quick pudding! Serve with strawberries and ice cream - delish

Barbados Cream
Mix together equal quantities of double cream and natural yogurt (a thick one). Put some fresh raspberries at the bottom of small glasses, spoon some of the cream/yogurt mixture on the top. Sprinkle each glass with brown sugar. Put in the fridge for several hours before serving. Serve with langue de chat biscuits. Very easy and no cooking needed.
