What are you unable to cook?
      #178753 - 27/08/2008 07:41

I just can't seem to cook lasagne, whichever recipe I try, though if anyone has a good one, I'll give it a go.
It made me wonder if we all have something we just can't master.Tell me about yours!

Fish - we never had it growing up & whenever I've tried different recipes its never very nice.
I wouldn't even know how to prepare salmon either although I'd love to be able to, as we should definitely have more fish in our diet.

Hi kate1

I cant cook toad in the hole, which is really annoying because I love it. I always either undercook or overcook the batter.

Also, I cant bake cakes. I have given up trying and now if we want cake we buy it.

Overall though I can cook everything else to a decent standard - 3 years at catering college helped :-)

Pastry! Even if I use the packet stuff and bake it blind it's never quite right. I can just about get away with it for mince pies and the like but I've never managed a crisp base on a quiche. It's always heavy.

Scones! My OH loves them, but they always come out as small as they went in or hard as rocks.
I would love to surprise him one day with a batch of cheese and a batch of plain scones for jam and cream. He would be spoilt for choice but I bet there wouldn't be many left by the end of the day!!

Yorkshire Puddings........I've tried to do them the same way as my mum used to make them and my SIL makes fab ones but mine are always a disaster. Bring on Aunty Bessies everytime.
I love cooking and don't think I'm a bad cook but have given up with the Yorkshire puds now.

Meringues and pastry (except choux which is a doddle). I can make the meringue on top of lemon meringue pie absolutely fine, its the oven cooked variety which just sit there for hours and refuse to dry out.

Pastry - have given up and buy chilled. My mum used to make the best pastry ever - never measured the ingredients, but guess she must have had the lightness of touch.

Also have big problems with roulade although OH makes a great one !

Meringues (not even sure if I can spell it!). They just lie there on the tray weeping - I know how they feel.

This is going to sound rediculous - but ......rice! Always tastes horrible when I do it - overcooked or undercooked, never seem to get it right , I have tried foolproof recipes and still no luck!!

I'm with ChrissiFi, I can't cook pastry either! I have resigned to buying it ready made or actually just buying pies etc, it's easier. I am ok at baking but don't do a lot as I'm trying to diet so can't have too many tempting things around or you just end up eating it all!!

I tried to make guacomole last night as I had some very ripe avocados, I know it's supposed to be really easy so I just mashed them up with some lemon juice, seasoning and some chilli powder as I didn't have fresh chilli's and it was awful, had to throw the lot out.

Anyone got a good recipe for guacomole?

morning ladies

Janmac, I can't cook rice either, I even bought a rice cooker, but still can't do it, it's a good job that the microwaveable stiff is fairly decent now. And pastry, I don't have the patience and I'm not gentle enough and have hot hands - it comes out like shoe leather every time, but then it's unnecessary when there is ready made stuff out there - thank you jusroll!

Janmac and Jenniferpl,
I have the perfect foolproof way to cook rice!
Honest, you just cannot fail!!

To cook rice for two people, measure out the rice.I always use Basmati.I keep a cup equivalent to one portion in the jar, so it's always two of those.
Add enough cold water to well cover.Boil for 10 mins.
Then, and this is the clever foolproof bit, drain into a colander, and run cold water through. Then place colander on top of empty saucepan and let the rice drain for a couple of hours or longer ( this is great 'cos you can boil it ages before you want to use it).
Then put colander(plastic of course) in microwave for three mins.....and there you are...it never fails, trust me!

I can't make cheesecakes. Even a 'delia' one was a disaster. I pull off the cake tin ring and the whole thing goes bleugh, everywhere!

Ah well, plenty nice ones in the shops anyway.

Hi Kate1

I shall try that next time thanks for the tip. Sounds the ideal for a dinner party as it can be kept in the collender and nuked!

I can't do sauces like the chefs on telly. You know the ones, they fry the steaks and fry up a bit of mushrooms/onions add sherry in there & a knob of butter and then they get a sauce. Just the thought of messing up prevents me from doing it.

My pastry is a disgrace but have bought a mixer and it's now fine.

Jenniferpl,
Thanks for othering to reply...let me know when you have done it.....obviously you have to increase the microwave time if you do more rice.

Just not good with deserts...... Have had a few stupefying successes though in the past! Stupefying because they were a success!! LOL!!! I decided long ago that a store bought desert was always a success, and never felt guilty about it either! LOL!
I have an extensive cook book library, but for some unknown reason I seldom am able to follow a recipe to the letter.... because I keep taking out or adding ingredients.... I am hopeless when it comes to that... LOL!!

My husband is a brill dessert cook (he has just made a seedy cake yum!)and this means I can stick to the savouries but pastry is always the frozen variety. Life is too short to stuff a mushroom though I have done this as a starter from time to time
