hi my name is liz i am a chef , this is my new favourite recipe . i make and sell them at the tea room where i work , and at home. they are easy to make and you can store them in the fridge for up to 6 weeks to slice off and cook when you have guests they only take 15 minutes , recipe 7 ozs butter , 12 ozs sr flour , 6 ozs castor sugar, 1 egg , tspn vanilla essence plus filling . i have done ginger and syup , white choc and apricot , peanut butter , choc chip , coconut . first cream the butter and sugar till soft , beat the egg and vanilla essence together then add alternately the egg mixture and flour when mixed add your filling of choice . next roll up inside some baking parchment or clingfilm to form a long sausage shape and refridgerate for at least an hour , to cook 180 degrees oven cut slices of cookie dough half an inch thick and arrange on a baking sheet leaving a 2 inch gp between them bake for approz 12 to 15 mins . the secret with biscuits is take them out while still quite soft and allow them to set before removing from tray , they are delicious .enjoy .

Hi Liz,
Your cookies sound really interesting; I am going to try them this week! Just one thing though, you mentioned 'filling'. Is this just to be mixed in, or used as a filling by being rolled in the centre of the mixture? Please let me (us) know!

Sound wonderful, and to be able to have in the fridge for any emergency visitor is even better. Are you sure they are ok in the fridge for 6 weeks? will the eggs be ok after that long?

hi treetops , liz here about the recipe for refrigerator cookies you fold the filling into the cookiedough before rolling up and refridgerating them , i sell tem at the tea room where i work also i have tried them out on my friends from the supper club , hope you enjoy them . nice to here from yo liz

hi debenjane ,liz here yes i am sure the cookie dough is ok up to six weeks , i use it at work and for my supper cub ladies . but it usually gets eaten before then and you can double the amount and half mixture and add two different fillings . approx 2 ozs filling for each . thanks liz
