What are your favourite spices?

If you could only use ten spices for the rest of your life, what would they be? You can have pepper for "free".

Mine would be;

Turmeric
Garam Masala (bit of a cheat there!!)
Cumin
Cinnamon
Saffron
Star anise
Ginger
Fenugreek
Mustard seeds
Nutmeg

Cumin
Corriander
Ginger
Nutmeg
Turmeric
Paprika
Garlic
Cinamon
Rosemary
And will join you in the cheat Garam masala.

If it weren't for my IBS, I would use spices lots oftener. I have to be very careful.... love cinnamon, but cannot even really have it in a herbal tea, for it gives me acid indigestion. On the other hand I use garlic regularly, and love it. So garlic has to be my favourite. And I am thankfully OK with ginger..... One Dutch teas brand, have a new herbal teas branch, based on the 4 elements. Fire is so warming and delicious - REdbush, Ginger and Pepper - and to my delight I can fully enjoy that "tea" without suffering any IBS related probs.
So, as much as I would love to cook regularly with spices, I have to stick to herbs.....

garlic! I must have garlic! But I'm going to count that as a vegetable, not a spice!

I love garlic only slightly less than I love my partner!

Canīt live without garlic! I get a panic attack when I only find shrivelled up papery stuff in my garlic container.

spices :
allspice (in sweden you just cant cook fish without it, and to eat "lutfish" without allspice is unheard of)
bayleaves
white pepper
cumin and other indian spices
peppermix with lemon (real nice on salads and fish)
sambal oelek

and then fresh herbs!! lovely. canīt go without fresh basil and thyme these days, but also rosemary,oregano, mint, cress......
oh, hungry now....

Cumin,
coriander
garlic
smoked paprika
dried chillies
nutmeg
fresh ginger
mustard powder...a must for good mayo
dried oregano...about the only good dried herb
and can I have a thai curry paste??
