Hello Ladies, I will be working Fulltime for a month(God help me )so i really could do with some ideas of what to cook at night.We tend to eat a lot of Chicken as well as Salmon,Lamb,Lamb and Beef mince. Even if i can prepare and Freeze, anything im begging you lol Answers on a post card to ..... lol Thanks.

Do you have a crockpot? I have to work odd hours and at the moment do 3 nights out. I get the meat and veg ready the night before, turn pot on when I get up, then put everything in and walk out. Neat to come home and smell dinner ready.
I also do doubles of casseroles and things like shepherds pies and macaroni and cheese then freeze them. Occasionally I use brought frozen meals.

Billericaylady, you could make a couple of meat loaves, eat one and freeze one, serve it either hot or cold, and to jush up a bit in the bottom of the loaf tin put a couple of cold hard boiled eggs and then the mixture on top. (I have good recipe if you would like it). You could also make some fish cakes, either fresh fish, or tinned salmon, and instead of using breadcrumbs, use semolina, sounds awful, but makes the cakes really lovely and crispy. They freeze very well also.
You say you eat a lot of chicken what about a really tasty chicken stir fry easy to prepare and quick to cook, you could cheat and buy the ready prepared peppers, onions, etc. Good Luck Plasmo xx

How about cooking, say, a whole chicken on a Sunday that would immediately take care of Monday and Tuesday's meals - variations on cold chicken dishes?

Chicken breasts wrapped in slices of parma ham, fried briefly on high heat with a few cherry tomatoes and lemon quarters in olive oil. Whole lot transferred to oven for 15 - 20 mins at medium heat and jobs a good 'un! Quick and healthy

The same as above but wrap salmon steaks in parma ham , stuffed with cream cheese.

When I know I haven't got time I cook a gammon joint on a Sunday and usually get three completely different meals out of it. Or I try to cook a casserole the night before then it just needs heating up on the top. I try to get into the habit of eating quickly when I get in then after tea prepare the next nights. Easier when I'm not hungry.

How about omelette or a stir fry? Both are quick and easy.
Or salad with baked sweet potato? Sweet Ps cook really quickly in the microwave.
I can't give any quick-cook-in-the-oven suggestions, as my De Dietrich oven is STILL not repaired!! Fingers crossed the broken part will be repaired and returned soon. It's been over 3 weeks already.

so you are working full time for a month. Good for you. But you're gonna be tired.
Now it's time the rest of the family did their share. Why don't you get them trained to help. Then they'll appreciate how much you do.
If the can't do all the cooking, they could at least do the prep.
I'm currently "training" my husband, and he's actually quite enjoying it. We've moved from sausage and mash (not healthy, but okay once a week) to pasta with a sauce made with tinned tomatoes and lots of chopped veg (onions, peppers).
Fajitas are good too - basically a chicken stir fry in a wrap.
And pizza - we get basic cheese and tomato, then add lots of toppings - mushroom, cherry tomatoes, onions, mozzarella, ham.
And you need some nice bath oil, so when you get in you can retire to the bath and not be tempted to take over

Thank you Wispa.Hubby great but often gets in later than i. my 17 yr old has offered to cook already so im sure itll be fine :-) Really appreciate all your ideas ,now where have i buried the Crock pot .......

Meat balls are a good meal that last over two days....well they do the amount I make.
Aquarius the chicken wrapped in parma ham thing sounds great...I do it with leeks, white wine, thyme, s&P Butter and out in oven......Jamie Oliver recipe...
Chicken goujons in cajun spices with pitta bread and salad is a quick healthy meal in our house.
It is hard to balance good healthy quick melas with a busy life style....

How about some lasagne you can make it and freeze it or make a big pot of bolognese and divide it into small bags and you can use them as you go along. Do you like curries? Make some and freeze them all the above will cover you over the month with the help of your daughter and hubby. Plenty of fish easy to cook. Salmon steaks with soy sauce and grated ginger wrapped in foil, 20 minutes in the oven at 180 deg C and it is done. I eat mine sitting on a pile of sauted spinach yum yum. Happy cooking.

Hi, This is the first time I have contributed so if I see the man in the wings with the shepherd crook trying to pull me off the stage I will know it was rubbish. My favourite quick meal is quick cook pasta, while it is boiling fry mushrooms and courgettes sliced finely and then add some low fat garlic roule cheese. When it has melted add the cooked pasta to it and stir in some rocket leaves as you serve it. Lovely and cooked in less than 10 mins. Serve with nice crusty bread and even salad if you want to. Hi julie99 Welcome to the forum! Do you live in the country? - your comment about shepherds made me wonder. Looking forward to reading your posts.
I know that lots of people have already suggested salmon steaks, but since my oven is STILL not working (3 weeks and counting) I have been using my microwave.
Rant over and recipe follows!
Put one salmon steak into a small lidded pyrex dish. Sprinkle with thinly sliced mushrooms and mixed herbs. Drizzle with one teaspoon of olive oil and put in the microwave. Cook on high for approx 2 mins 20 secs.

Yes I live in Kent. I have a very warped sense of humour. Do you remember some awful foreign talent show that used to be on the tv late at night. If the contetants were really bad and refused to leave the stage a man used to come on and pull them off the stage by putting the shepherds crook around their neck. It was probably funnier to watch than describe, as they say it lost something in translation. Julie

Julie99 - that sounds yummy!! and Welcome to the forum!! Try using quorn as it doesn't need cooking for a long time - can just be simmered in any sauce for 5 mins to soak up the flavour!!!!
