I just made the most deliciuos chilled cucumber soup with coconut and lime (and a hint of chilli and lemongrass).
It's heavenly!

sure, here it is ... feel free to adjust to your own tastes ...
finely chop a small onion and saute until soft in a tablespoon of sunflower oil
peel and chop one and a half cucumbers and add to the pan with a chopped garlic glove
add 300ml boiling water and half a teaspoon bouillion powder. bring to a light boil and simmer for 10 minutes. Cool and blend.
saute 4 finely chopped spring onions and 1 bruised lemongrass and 1 red chilli until softened. Add to the cucumber mixture.
Add a tin of coconut milk and the zest and juice of a large lime.
try and wait for it to chill before eating!!
I've just made a big batch of lemonade.... a cake and a warm lentil salad. I'm feeling very domesticated today.

Thanks so much for that LadyWillow,it sounds superb and I LOOOOOOVE home made soups,so another one to add to my repatoire(SP).So sorry I cant join you for a glass of wine must get back out to the garden while it is so nice.

Thanks, Ladywillow, it does sound gorgeous. Can I just ask if 'bruised' lemongrass just means bashed?! Do you put it in whole, with the whole chilli?

Yes, just think of something that annoys you and then bash it hard with a rolling pin so it splits into two or three sections (it normally remains a whole at the stem .. .doesn't matter it not ... you'll fish it out before serving).
I'm a sucker for soups .. make them all the time. My favourite is a Curried Butternut Squash with coconut milk ... it's a dream!

I am definitely going to try that soup!! Sounds wonderful! maybe for my birthday dinner as a starter, and salmon for main course. do you have any gorgeous salmon recipes as well??

Afraid not, I don't eat fish or meat. I could give you a recipe for a mean warm lentil and spinach salad though!!

Ladywillow -I love curried butternut squash with coconut milk, made that quite recently from a magasine I think, with thai green curry past. also love the Nigella butternut squash soup recipe in her Express book.
