The Rev's Scrummy Date and Oat Cake Slices

I have a friend who is a Methodist Minister and, a couple of days ago he gave me a recipe for some date and oat slices which I really felt I had to share with you - they are sooo scrummy! Here goes:

1 beaker of oats
1 beaker of S.R. flour
3/4 beaker of brown sugar
4oz soft margarine
1/2 teaspoon of bi-carbonate of soda
375gr (2 oval boxes) of dates (de-stoned and chopped)

(I used a tall mug for the beaker and a small mug for the water!)

Method

1. Put the dates and cup of water in a saucepan and heat on low. (Just to really moisten the dates without drowning them!).

2. Meanwhile put all the other ingredients into a bowl and fork in the margarine.

3. Put a good half of the oat mixture into a 7" x 11" greased tin. Spread on the dates. Cover with the rest of the oat mixture.Press down gently.

4. Put into a medium oven (I put the oven onto 160) and cook for about 25 minutes.

5. Remove from the oven and after 10 minutes cut into slices.

When they were cold, I put mine into the fridge and they tasted really great chilled. Normally recipes always seem to go wrong for me the first time I try them,but this was an absolute success and the whole lot were wolfed in a couple of days!

I would have most certainly made them, but unfortunately, OH and I do not like dates!!!!!!, could you use anything else?

You know me and cakes! They sound lovely - after you warm the dates in water -do you strain or just put on liquid as well. I confess I'm not usually successful with 'cup' measures but will give it ago.

Hello Ann! It was very hit and miss as I had never made the recipe before - basically I just warmed the dates up in the water and then strained it away so that they were left really moist but not water-logged. As for the beaker/cup measurements, that was purely guess work too - just a large tall mug for the dry things and a small coffee size mug for the water.Hope it works out okay for you - let me know! Plasmo,I'm really surprised that you and OH don't like dates - I could quite imagine you handing around a plate of stuffed ones at Christmas time! Another illusion shattered! I wonder if you could use dried fruit soaked in some sort of alcohol as an alternative? Spangle x

P.S. The mention of lemon drizzle cake sounded really good earlier on today -wouldn't mind the recipe when you've got a minute.Thanks!

Spangle, Isnt it nice to see Ann above ha ha.

When OH worked in Saudi, I discovered that the Saudis absolutely love dates, they have them with nuts inside!!! with white and black chocolate on the outside, but we still couldnt be tempted.

I used to come back with loads in my case for my son and sister, who love them, I shall be sure to give my sister your recipe, it will go down so well in their house.

I absolutely love dates but if you don't like them Plasmo you can always use dried apricots. Don't forget to save us some!

I love dates .This recipe seems quite healthy too, so i think i will give it a go...will keep you posted.
