Ideas please for a gluten free lunch.

Have a friend coming for lunch soon,, who has to eat gluten free meals.
In the past I have made soups, done omlettes and salad, jkt potatoes with various fillings.
Does anyone have any ideas for an interesting lunch?

You could do a tasty stir fry with rice noodles. Just watch the soy sauce, though, as most varieties contains wheat. Or you could buy corn pasta (available from most supermarkets) and do something with that. Sainsbury's 'Free From' pitta bread are ok, as are their mini baguettes - we use either of these as a base for home-made pizza for my daughter. Corn tacos are also fine (you'll find with the Mexican range), filled with chilli, chicken or a filling of your choice.

Thanks for all that.The mexican meals you buy in a kit....El paso, are they...do they use corn tacos? I think if they do, I may do that, with salad and sour cream and grated cheese..what a good idea.

Just check the ingredients of anything you're looking at, to be sure. The ones we use are Old El Paso Taco Shells (eg http://www.sainsburys.com/groceries/index.jsp?bmUID=1231174903332)

My dad needs a gluten free diet so if he's here for a meal I cook from scratch and just use gluten free flour and other ingredients rather than the normal stuff. You have to look at ingredients on supermarket packets very, very carefully - any sign of wheat and it's a definite no and it's in some very unexpected things.

My future SIL has coeliac disease, so I cook gluten free for him all the time and thought I was an expert, but hadn't even thought about Old El Paso, although chilli con carne is a staple in this house, so thanks girls. Good luck with lunch kate1

Thanks anne,
I went out for lunch with this friend just before Christmas and she chose chilli then, so don't want to give her that.
She has been for lunch here lots of times and I'd exhausted my ideas.I think the El Paso route is the way to go, especially as I love those mexican kits, and OH doesn't.

what about risotto? I've filled some red peppers with risotto topped with grated cheese and baked in the oven.

Failing that open a couple of bottles of wine

How about a big tinful of chunks of roasted veg & chicken breasts with goats cheese? - yellow & red peppers, chunks of red onion, mushrooms, cherry tomatoes, thickly sliced courgettes. Drizzle with good olive oil and roast in a hot oven for 30 mins or so. Slit the chicken breasts, put in a good slice of goats cheese & stick on top of the veg & roast for further 30 mins.

Finish with a good drizzle of balsamic vinegar & serve with a salad of baby spinach leaves.
