Left over Turkey

Any ideas for using it up? We still have half left!

I usually make Turkey a la king. It uses the left over mushrooms and cream. It is lovely with some rice and a bonus it freezes. So after Boxing Day I usually make a big batch of this and we have some for dinner that day and the rest in the freezer for future use.

If you like the sound of it I will pm you with recipe.

Other than that.... saute some onion/mushroom/pepper till soft, add some gravy and chopped up turkey. Put in dish. Cook any brussels that are left and some potatoes. Mash together and put on top of turkey mixture, sprinkle some cheese on top and cook in oven at 170 for about 30 mins or until the cheese is nice and crispy.

Phil Vickery on This Morning says put all the chopped pieces of turkey into a pie dish, with all the left over veg including the roast potatoes. Pour over a turkey gravy with a touch of tarragon in it. Put pastry on top and bake in oven. Was going to try it but couldn't be bothered to make my own pastry in the end.

Like you Biker Babe we still have a good amount left so I will be doing turkey in a white wine sauce tomorrow served with rice and a mixed selection of vegetables.
My mum and uncle brought us a 15lb free range turkey this year. It was is just delicious hot and now cold but by day four tomorrow I, as will the rest of the family, be glad to see the end of it.

Any leftover meat, of any description, I love sliced cold with potato cakes and baked beans. I may be a pleb but it's yummy.

How about making turkey soup with the carcass? Turkey pancakes are really tasty too! Have you tried stirring some turkey bits into a tomato sauce and serving it with pasta?

I have just a bit of turkey left and will be finishing it tomorrow with homemade chips and spagetti hoops (and brown sauce - very bad and nursrey type food, but to be honest it's the turkey meal I enjoy most - i'm sure it sounds disgusting - but I love it!

Jamie Oliver showed us a delicious sounding leek and turkey(can be done with chicken) pie. Just cook gently the leeks in some butter in a large pan. Added some small pices of crisp streaky bacon and make a sauce if more liquid needed and then put it all with the turkey pieces into a pie dish and put a pastry lid on top and bake until pastry is cooked. Looked delicious so we will do that tomorrow.

Make up a white sauce, and stir in chunks of turkey and some frozen sweetcorn. Place in a pie dish, and cover with a puff pastry lid (frozen, ready rolled is fine), brush with milk or beaten egg and bake in a hot oven.

Thanks all for the ideas. I only really like turkey 1 time per year! Will keep a copy of this for future years.
Next week its a rib of beef so please get your thinking caps on again as, once more, I only like the beef (well, actually, its the Yorkshire pudding with gravy I like) one time!
