If you have a big piece of Parmigiano wrap it in a clean cotton tea towel soaked in white wine and then in the fridge, lower shelf. Perhaps you don't need to soak it as I understand your place is already humid. Do it if it dries too much. Trust me, I live with Parmisan. |

All cheese goes mouldy and all cheese shops trim cheese to keep mould at bay. So don't worry if your cheese goes mouldy, just trim it off and the cheese will be fine underneath. I could be another Mrs Widdle, couldn't I? |
