Help with Lemon Grass, please

I've never used lemon grass but have a recipe which includes it. I tried the recipe yesterday and just chopped it into slices and cooked it with the rest of the veg but it was it was hard, should I have even eaten it!?
Any guidance would be greatly appreciated. J

Re: Help with Lemon Grass, please

Hi Jessica, I've had a few disasters with lemon grass over the years but generally now I just bash the stem and minced it finely and very finely sliced the grassy part... it has to be very finely sliced otherwise it can be stringy in your mouth!

Hope this helps

Alison

Hi Jessica, I usually discard the outer layer, then bash and chop the rest (root end).

you shouldn't use the stalk only the softer inner part , and like Elsie has said it needs a good bash.

Lemongrass is a good thing to grow. When you cook with it you just pull out a couple of bits and use the tiny bulbs at the bottom. The top can be used to make a refreshing tea, it's particularly good combined with ginger. This helps headaches and tummy upsets and can be taken hot or iced. Add honey if you wish and it is good for a cold.

Coincidentally I have just used fresh lemongrass for the first time this evening! Accordingly to good old Delia Smith you treat it the same way as leeks - trim the top nd bottom, take off the outer leaves and chop!
