Easy cake No.2.

Following last week's sucess with the ginger cake here's another one.Not the cheapest when I think about it but it does cut in to 8-10 pieces depending on......!!

MIX TOGETHER:
9oz SR flour
6oz soft marg.
3oz soft dk brwn sugar(you don't need more 'cos of all the fruit)
3 large eggs
1bag(500g)mixed luxury fruit.(Sains.or Tesco)
small handful of pecans or almonds
1 dsrtsp glace ginger
A few dried cranberries,blueberries,dried cherries(dozen or so)
1 tblspn good marmalade(any fruit!!)
1 tsp mixed spice
2 tbspn cooking brandy(optional)I like to leave the fruit absorbing this while I get the rest of the ingredients out.
Up to 2 tbspn milk(depending on mixture texture)

Give this a good stir until well blended.
Put into 8'',20cm cake tine.Lined as before with liner or baking paper.
It takes about an hour and 45 mins or so.I bake at 150C.
Keep and eye on it but do not open oven door before at least an hour and a half.A thin skewer inserted in to the centre should come out clean to indicate that it is cooked through.Give it another 5-10 mins if not!!!

HOPE YOU CAN MANAGE IMPERIAL MEASUREMENTS STILL!!

Oh yes ... scrummy. And I'm the only one who likes ginger cake so I've got it all to myself - my waistline is already non-existent, what hope is there for me now with all these lovely recipes being posted!!!

Ooh, I'm looking forward to hearing how this one goes, Ashbee. I'm going to make it at the weekend because I still have some sticky gingerbread left along with the cherry and coconut I made last weekend!

Now it's out of the oven. And out of the tin and cooling...it looks and smells wonderful! I will let this one cool down so you'll have to wait to find out how scrummy it is.

I wouldn't mind the coconut and cherry cake recipe MT...

OK, this is another success! A nice moist, rich fruit cake that is easy to make. This will be the replacement for my own fruit cake recipe that got lost and never found...thank you merc1.

I just do a 2 egg sponge with grated rind of a lemon in the loaf tin as before and when it comes out of oven pour over lemon juice mixed with 3 oz sugar(caster or gran.)
I have seen it done with lemon icing made with lemon juice and icing sugar. merc.x.

I have just got your fruit cake out of the oven - it smells wonderful! It's OH birthday on Sunday and as he loves fruit cake I thought I'd treat him - can't wait to get stuck in!! YD came over while I was baking and said to make sure we save her a piece - it looks really good.
What's next in the recipe file?
Do you remember Jimmy Young programme on R2 years ago - PInly & Perky voice saying "what's the recipe today, Jim?"
OMG, that makes me feel soooo old!!!

merc1 I am an absolute cr*p baker.....I try so hard but never seem to get it right...
An example is the last time I tried to make meringue it 'bled' all over the floor of my oven and I never did get it totally off...

The two cakes I absolutely adore are Coffee and walnutcake and Carrot Cake....I would be eternally grateful if you would post an easy recipe for either of these and I promise I will give it a try..

LEMON DRIZZLE CAKE

6 ozs marg
6 ozs sugar
6 ozs flour
3 eggs
Grated rind of 1 lemon

Mix all together, place in square greased & lined tin, bake in oven.

Mix tog. 3tbsp. granulated or caster sugar and the juice of 1 lemon.

Make holes in cake with a fork whilst still warm and drizzle mixture over.

Dead easy to make & delicious!

Anne,they will all manage that won't they.

Sallykins,I am cr*p at other things you probably can do I am sure.Meringues weep if you cook them at too high a temperature by the way.
Try this for Carrot Cake,one of my favourites too.

8oz SR flour
2 level tspns baking pwdr
5oz light soft brn sugar
2oz chopped walnuts
4oz grated carrot
2 ripe bananas,mashed
2 eggs
1/4 pint oil(not strong tasting so sunflower or groundnut)

Sift flour and bkg pwdr
Stir in sugar
Add nuts,carrot and bananas and mix lightly
Make a well in the centre,add eggs and oil and beat until blended.

Put into 8'' (20cm)tin,lined as before.

Bake in 180C oven for about an hour and a quarter.Needs to be golden brown and springy to touch.
When cool,top with:

3oz soft butter
3oz philadelphia cheese(NOT the light one as it goes runny!)
6oz sieved icing sugar
1tsp vanilla essence

Thanks merc, I'll add these new recipes to my collection and try them in the next couple of weeks...I baked the fruit cake yesterday and it does taste better the next day ... wonder about tomorrow, if there's any left.

I remember Jimmy Young's silly voice too! Doesn't that make you feel old!!!

All this cake baking is no good for the the figure, but delicious to eat! At least it cheers us up from all this rain.
I have just made a lemon drizzle cake and the house smells lovely - it has even tempted my son to get out of bed. He took a piece said "is it someones Birthday?" and then went back to bed!
Don't know which recipe to try next cos they all sound so tempting.

For a 2 egg mixture I use the loaf tin 2lb size but not one of those with seams for breadmaking!!For the 3 egg one an 8'' should be OK.I have a fan oven too and do it at 180C,Autumn.Takes 45mins or so.I am not the precise one!!!Good luck,merc.x.
PS you could even make it in square deepish tin 8'' or so!!!

Merc - made the fruit cake - it was super! I didn't have a packet of fruit, so made my own mixture, and sloshed in more brandy instead of the milk!! OH was a happy bunny, so we will have some more this evening as birthday cake!!
