What could I have for dinner with ...

I have the following in the house:
Chicken breast pre-cooked
Salad
New potatoes
Selection of veg
Usual store cupboard items!
Any ideas for something tasty? OH is having his meal at the golf club after playing in a match so it's just me!

I had jacket potatoes, some chicken and some baked beans! Not the best of dinners!
