NO COOK CAKES - advice please!

I have already posted the story of my De Dietch oven and at present the part is being repaired so I am without an oven for the foreseeable future. However it is my MIL's birthday next week end and I always make her a cake.

Does any one have a recipe for a no cook cake or cheesecake I could make? MIL is very partial to ginger so if it could include ginger it would be even better.
Thank you in advance.

How about something along these lines?

You could always crush ginger nuts for the base!

Delia's chocolate truffle torte!

Absolutely gorgeous and no cooking. You don't need the glucose, but if you got some stem ginger in syrup, and used the syrup instead of glucose, and added very finely chopped stem ginger then that might just fit the bill.

Re: NO COOK CAKES - advice please!

My mother's "Continental coffee cake" which is a sort of home made tiramisu - much better than the commercial variety.

Beat together butter, ground almonds, coffee essence (Camp coffee works well) and icing sugar.
Soak trifle sponges or lady's fingers in a mixture of "top of the milk" cream and sherry.
Layer the trifle sponges with the butter mixture into an oblong shape.
Chill.
Whip up double cream till stiff and coat the cake.
Toast sliced almonds in a frying pan and then decorate the cake with them.

Sorry about the lack of quantities - it's about 8oz of butter and everything else is "to taste"

My sons love this instead of birthday cake - it is delicious though very very fattening!

On that happy note, goodnight all!

Hi Foxie

Cant help with a cake, but I make tirimisu fairly often, this version is dead easy and uses ready made custard and marscapone. I often leave the fruit out for a classic tirimsu and instead of cocoa I whizz up a bar of green and blacks in the mini frrod processor to sprinkle on top.

Some of the recipees sound lovely

Have a good day

Re: NO COOK CAKES - advice please!

Hi shootingstar
If the cheesecake was for my family, I would cut you a big slice and send it over topped with fresh orange segments! But, as it's for my MIL I wouldn't dare cut a teeny weeny slice even for you!!

Re: NO COOK CAKES - advice please!

I can't really claim it was mine but I make something similar with lemons and couldn't find the recipe. It stemmed from the fact that years ago I wanted to make a moussey (hah!) type dessert but without raw eggs.

Hope it works out well Foxie and that she likes it.

Just back from MIL's taking her pressies and the cheesecake. She was really impressed (!) and it looked very pretty with fresh orange segments on top. She and my bil and 2 sil's will be eating it this evening.

So thanks again, I can recommend the recipe, although I haven't tasted it, it looks impressive!

You mean you didn't even get a little to taste, no cook's priviledges . You didn't even qualify on the grounds of Quality Control or Health and Safety?? Not even a lick of the bowl?

Maybe we should make one for you
