I had to help recently with making sandwiches for an event and a couple of ideas which I hadn't really heard of before was grated carrot, mayonaise and grated cheese - it was really nice. Another was Philadelphia cheese and grapes. An unusual one but I personally don't like it is Mars Bar sandwiches.
