Dutch smoked sausage casserole. Use any veg you have available Fry onion, carrot, celery, red pepper till soft. Add tin of tomatoes and some extra water, a tin of drained rinsed beans - haricot or any other variety and some precooked potato cut into quarters ( i usually cook in microwave as stay firmer). You can add other veg that cooks quicker such as courgette or green beans now. Add sliced smoked sausage and simmer for a few mins till all hot. One Mattesons sausage ring makes enough for 3 people. The quantities for veg are all variable - you know best how hungry you are! This is really cheap - less than 3 pounds. |
