I always do mine like that-really low all night and then turn it up when I am up and about the next morning. Think that deals with the bacteria too. No-one ever been ill to date after our Christmas dinner. I also cook every other kind of meat, poultry by doing it long and low during the morning/day and a blast when everything else is ready. Always end up having really tender meat whatever the cut. |
