This recipe has proved really popular with my friends.....so thought I'd share it here...this is REALLY delish - it makes two cakes - and can be frozen - can be eaten on its own or spread with butter,flora etc. whatever you fancy..... For TWO CAKES: 4oz/100g soya flour 4oz/100g wholewheat flour 4oz/100g porridge oats 4oz/100g linseeds 2oz/50g sunflower seeds 2oz/50g pumpkin nseeds 2oz/50g sesame seeds 2oz/5og flaked almonds 2 pieces stem ginger, chopped finely 8oz/200g raisins Approx 3quarters litre soya milk 1 tbsp malt extract half teasp nutmeg half teasp cinnamon half teasp ground ginger Method: Put dry ingredients into a large bowl and mix thoroughly, then add soya milk and malt extract. Mix well and leave to soak for about half an hour. If mixture is too stiff add a bit more soya milk. Spoon into a loaf tin lined with oiled greaseproof paper. Bake in oven Gas mark 5 or 190 deg.C. for about 1 and quarter hours or til cooked through (test with skewer). Turn out and leave to cool. (With fan-assisted ovens cooking time may be a bit less ) Ideally eat one slice a day... (but you might not be able to stop at one!!!!! ![]() Marsha |
