How about omelette or a stir fry? Both are quick and easy.
Or salad with baked sweet potato? Sweet Ps cook really quickly in the microwave.
I can't give any quick-cook-in-the-oven suggestions, as my De Dietrich oven is STILL not repaired!! Fingers crossed the broken part will be repaired and returned soon. It's been over 3 weeks already.
