What to do for just me? Can I be bothered?

I forgot my daughter said she was out and eating at her boyfriends tonight. OH is away in LA so its just me to cook for tonight
I had got some fresh mince in to do a chilli beef with rice but now I am thinking 'can I be bothered' to do it just for me and on a hot summers evening like this!
What do you suggest I do?
Cheese and tomatoes on toast comes to my mind. I know it sounds a bit feeble but it is tasty and quick and easy

I sometimes have a bowl of cereal if it's just me - hard to find a wine to match, tho!

I can't be bothered much if I'm on my own - heaven help me if I ended up on my own all the time! I'd live on toast and jacket potatoes!

I guess you could do a jacket in the microwave if you have one and have it with either your cheese and tomato or something else.

On saturday night we had jackets, salad and some large prawns quickly sauted in some garlic butter - yum yum!

If I am on my own and want to be super healthy I often do a salad with lots of colour - and open some sweetcorn and have it with either a tin of tuna or a tin or beans (e.g. red kidney beans from a tin!).

The mention of all that yummy sounding food has got my taste buds going and am I feeling hungry Holly.

Still I am worn out from weeding all afternoon so would you mind popping over Holly and doing one of the above. Your choice. I'll be happy what ever you make me

Tonight I've cooked two quiches and some jam tarts (well there was left over pastry) and it's all cooling in the kitchen. Too hot to eat much - lunch was a cucumber roll and an apple and I'm still not particularly hungry. OH is working late so at least there will be something for him when he gets in and by that time I might feel like a slice of quiche and salad if I'm still awake.

If it's just me I put a skinless. boneless salmon fillet with anything I want (prawns, mushrooms, cherry tomatoes, whatever) in a foil parcel with a dash of white wine and seasoning, bake for 15 - 20 mins and eat with veg. Dead easy and nutritious and no fat!

I said last night I couldn't be bothered and I wasn't.
Didn't bother last night with a meal as such and instead I had a fresh tomato and basil soup with brown bread and a wedge of mature cheddar.
Yes all those lovely dishes you all mentioned sounded lovely but I couldn't be bothered. It was too much effort and to hot to eat a big cooked meal in my mind and to much bother.

dbverycherry, I like the sound of your fresh tomato and basil soup, did you make it yourself? If I am on my own I invariably make a lovely omelette with mushrooms and herbs, its quick, easy, and nutricious. Plasmo xx

Hi Plasmo No I was to lazy last night so the soup was a fresh one ready made from Tesco Healthy Living Range which I had in the fridge and it needed to be used up It was good with nice chunks of tomato in it.
My mum came over for the day today and stayed for lunch and an evening meal. It was nice to have company.
We ate well and I made up for being good and healthy yesterday
We shared portion Fish & Chips for lunch and a thin crust pizza for tea but with salad to be healthy !
Sat chatting most of the day
