Pork with Ginger and Noodles

Serves 4 Easy250g pack rice noodles 2tbsp sunflower oil 350g pack Chinese Exotic stir-fry vegetables 2.5cm (1in) piece fresh ginger, thinly sliced 500g (1lb 2oz) diced pork 195g jar teriyaki sauce with black pepper

1 Cook the rice noodles according to the pack instructions. Heat half of the oil in a pan over a high heat and stir-fry the vegetables and ginger for 2 to 3 minutes, until the vegetables begin to soften and colour a little. Remove and set aside.
2 Add the remaining oil and stir-fry the pork for about 3 minutes until browned and almost cooked. Add the vegetables and pour over the teriyaki sauce, stirring until hot and bubbling. Serve with the rice noodles.
