Leftover chicken recipes are a wonderful and creative way to use up any meat you have leftover after a roast dinner. We all love a chicken sandwich, bit there are much more interesting things you can make to get a whole new dinner out of your leftovers, which saves food from going in the bin and saves you the effort of cooking from scratch again.
Leftover chicken can easily be made into a chicken soup, curry or salad. They make for really speedy dinners, which is ideal for a Monday and Tuesday night, when we’ve had a busy day and are not looking to spend too long in the kitchen fixing up supper.
As always with storing and reheating leftovers, cool it as quickly as you can, then wrap it and pop it in the fridge, where it will keep for two days. Make sure it’s piping hot right through before serving.

It’s perfectly crunchy and bursting with flavours, making it a real treat. Depending on how much heat you can handle, scale up or down the chilli.
