Five Fabulously Fun Ways With Ice Cream Sandwiches

Ice cream sandwiches are the best way we’ve found for injecting energy into hot days (although we also find they’re a great pick-me-up when the weather’s not so great, too!). They’re rich, creamy and really, really satisfying. Layered up with all sorts of sauces, toppings and trimmings they couldn’t be more appealing to the eye, and they taste as good as they look.

So, next time you fancy a treat then why not make yourself, family and friends an ice cream sandwich – or two? They’re a doddle to make but they look impressive.

So if you fancy whipping some up for your next dinner party then you can pre-scoop the ice cream and leave it in the freezer in balls, get all the toppings out and ready, and assemble in minutes as soon as its dessert time.

All you’ll need is some ‘bread’ in the form of biscuits, waffles or meringue, a sauce of some kind, your favourite ice cream plus a few bits and bobs to add texture, colour and crunch.

You can easily freestyle these gorgeous puds, but to get you started we’ve come up with five different combinations that are sure to impress.

For each one all you do is add a few balls of ice cream to one side of your ‘bread’, then add toppings and drizzle with the sauce before squashing on the other half of your ‘bread’. You may want to add toppings to the outside too, but have a play and see what works for you. Here’s what you’ll need for each.

This heavenly combo is a sticky, sweet mass of childhood favourite flavours but be warned, you may never want a standard banoffee pie ever again. Using the banana chips gives crunch while a few peanuts give a savoury edge for an almost salted caramel effect.

You will need:

  • Caramel ice cream

  • This tried and tested flavour pairing is a match made in heaven. Thick melted chocolate and drippy vanilla ice cream need to be eaten up quickly before they get too squashy – but we’ve never found it to be a challenge we couldn’t rise to.

    You will need:

  • Chocolate chip cookies
  • Chocolate ice cream
  • Chocolate sauce
  • Flakes
  • Sprinkles

  • This twist on the classic British dessert just screams summertime. Use up fresh berries and soft whipped cream in between layers of meringues and ice cream for a really showstopping dessert.

    You will need:

  • Raspberry sorbet
  • Vanilla ice cream
  • Berry compote
  • Whipped cream
  • Fresh berries

  • If you prefer the tang of frozen yoghurt to the sweetness of ice cream then this one will be right up your street. The pistachios add texture while the melted chocolate makes sure it doesn’t taste too healthy!

  • Pistachios
  • Melted chocolate

  • Cheesecake has to be one of our all-time favourite ways to end a meal, so why not make it even more indulgent by serving it up in ice cream form, we thought. With just three ingredients you will probably have everything you already need to make this one and you’re sure to love then tangy jam against the sweet ice cream.
