Jambalaya is a wonderful Louisiana rice dish – a sort of Creole paella. The Hairy Dieters’ southern-style jambalaya recipe cuts down on the fat, keeping all the spicy flavour.
Cassoulet is a hearty dish but the Hairy Dieters have reduced the calorie count while keeping the big flavours in their special cassoulet recipe. Choose really meaty sausages, take the chicken skin off and use as little oil as possible – it all helps.
