Swedish beef burgers
Preparation time: 15 minutes
Cooking time: 10 minutes
Makes 12
500g (1lb 2oz) minced beef
100g (4oz) gherkins, finely chopped
150g (5oz) cooked beetroot, finely chopped
2 garlic cloves, crushed
1tbsp Dijon mustard
1 onion, finely chopped
2 egg yolks
Place all the ingredients in a large bowl and mix thoroughly. Season well. Divide the mixture and shape into 12 burgers – wet hands make the job easy. Brush both sides with a little oil and cook on the barbecue or a ridged griddle pan for 3 to 4 minutes on each side.
Per serving: 95cals, 5g fat, 2g saturated fat, 2g carbohydrate
