 Spiced Peach Compote


This recipe includes cardamom and ginger, which are both thought to have a calming effect on the digestive system.

Preparation time: 10 minutes
Cooking time: 10 to 15 minutes
Serves 6

6 peaches
1 bulb stem ginger, chopped
4 cardamoms, lightly bruised
1 to 2tbsp clear honey
1 bottle rosé wine
bio or non-dairy yogurt, to serve

Put the peaches in a shallow pan with the spices, honey and wine. Cover with a disc of greaseproof paper, then bring to the boil and simmer for 10 to 15 minutes or until the peaches are tender. (The cooking time depends on the ripeness of the peaches.) Leave to cool in the liquid. Peel the fruit if you wish and serve warm or chilled with yogurt.

Per serving: 140cals, no fat or saturated fat, 15g carbohydrate
