 Seared Peaches


The combination of succulent, ripe peaches, smooth brandy and rich clotted cream makes this a to-die-for dessert.

Preparation time: 10 minutes, plus time to stand
Cooking time: about 5 minutes
Serves 6

6 ripe peaches, halved and stoned
6 tbsp brandy
6 tsp demerara sugar
12 tsp clotted cream

1 Pack the peach halves in a roasting tin, pour over the brandy and leave to stand for up to an hour.
2 Sprinkle each peach half with ½tsp sugar and grill until the sugar has caramelised.
3 Add a dollop of cream to the centre of each peach half and serve at once before it melts!

Per serving: 140cals, 6g fat, 4g saturated fat, 12g carbohydrate
