 Pan-Fried Courgettes and Chilli


The addition of chilli to this lovely vegetable dish gives it a real kick.

Preparation time:
15 minutes
Cooking time: 10 minutes
Serves 6 to 8

2 tbsp olive oil
1 mild red chilli, deseeded and chopped
4 to 6 medium courgettes, sliced
1 to 2 tbsp freshly chopped coriander

Heat the oil in a large non-stick frying pan and cook the chilli and courgettes gently for about 10 minutes. Season with sea salt, garnish with coriander and serve.

Per serving for eight: 40cals, 4g fat, 1g saturated fat, 1g carbohydrate
