Linguine with prawn and pesto
Pasta and protein, the best post-workout combo
Pasta is one of the best slow-release energy boosters and is easily digested.
Preparation time: 10 minutes
Cooking time: 12 minutes
Serves: 2
6 medium tomatoes
150g (5oz) dried linguine or spaghetti
2tsp olive oil
125g (4½oz) fresh cooked prawns
1tbsp fresh pesto sauce
fresh basil, to garnish
1 First of all, put a large pan of salted
water on to boil for the pasta. Meanwhile, halve the tomatoes and scoop out the seeds with a teaspoon and discard. Then finely dice the tomatoes.
2 Put the pasta on to cook. A few minutes before it's ready, heat the oil in a sauté pan, add the diced tomatoes and some seasoning. Toss well to heat through but don't allow them to go mushy. Then simply add the prawns and pesto sauce, heat through and stir into the drained pasta. Add fresh basil and serve immediately.
