Creamy tarragon dressing
The simplest of sauces to jazz up a tomato salad, and it makes a refreshing change from basil
Preparation time: 5 minutes
Makes: 150ml (1/4pt) dressing
150ml (1/4pt) double cream (or half fat crème fraîche)
1dtsp red wine vinegar
1 garlic clove, crushed
15g (1/2oz) bunch tarragon, leaves chopped
Place all ingredients in a bowl and stir. This is delicious drizzled over ripe tomatoes, cooked chilled French beans and chopped cucumber.
Per serving: 74cals, 8g fat, 5g saturated fat, 1g carbohydrate
